Black Bean and Brown Rice Bowl

Black beans are versatile, full of fiber and antioxidants and easy to have on hand if you purchase canned black beans. This is a great recipe for an easy weeknight meal and is endlessly customizable according to your tastes and preferences. A base of black beans and brown rice is a powerful meal.


Black Bean and Rice Bowl - Ingredients:

  • 1 can of black beans, drained and rinsed
  • 1 cup cooked brown rice
  • 1 red bell pepper, diced
  • 1/2 red onion, diced
  • 1 avocado, diced
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine the black beans, cooked brown rice, red bell pepper, red onion, and diced avocado.
  2. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
  3. Pour the dressing over the rice mixture and toss to combine.
  4. Serve the black bean and rice bowl warm.
